Chocolate Mocha Cookies Recipe

There’s one thing that I love almost as much as coffee – it’s chocolate. I love the Italian Choco-Coffee Wedding Cookies that Jen from Stiletto Sports bakes, and when I came across this recipe from I Need Coffee I knew that I had to try it.

However, I did make a few changes to customize it along the way. Here’s what I came up with after a few different experiments.

Ingredients

  • One box of chocolate cake mix
  • Two Eggs
  • Half a cup of butter
  • Half a cup of espresso or dark roasted coffee (room temperature)
  • One cup chocolate chips

Instructions

  • Preheat oven to 350 Fahrenheit.
  • Except the chocolate chips, mix all of the ingredients on low until well mixed. From personal experience, I do not recommend doing it by hand.
  • Add chocolate chips and mix them in.
  • Spray cookie sheets with cooking spray. Scoop the mix on to cooking sheets and bake at 350 Fahrenheit for 12-15 minutes.
  • Cookies should easily come off the cookie sheet if cooked fully.
  • Enjoy!

The cookies taste a little like a cake, with the chocolate flavoring of a delicious brownie and just a tiny hint of the coffee flavor. It’s like a delicious mocha from my favorite coffee shop with extra chocolate. Overall, a perfect ten. It even gets bonus points for being super easy to make.

Highly recommend pairing these cookies with a glass of milk or vanilla ice cream.

I don’t know about you, but I’m pretty excited about today’s big game! I have a feeling that it’s going to be a great game that’s going to go down to the final seconds. There should be lots of television ads that make us laugh and some that make us wonder what were they thinking when they paid millions of dollars to run that.

Coffee Beer – Favorite coffee stouts and coffee porters
I’ll admit, I’ll probably have a beer or two during the game, I’d love to try a coffee flavored beer or a beer made with coffee.

Espresso Stout
Or maybe I’ll brew your own coffee beer. However, I probably should’ve started working on this project before the day of the game, but I’ll remember this one for future reference.

The Best Chili You Will Ever Taste
My partner in crime, Jen from Stiletto Sports pointed out this recipe. It includes three of my favorite things – coffee, beer and chili! That’s really all I need.

Coffee Burgers
Besides chili, there’s one other food that I think when I hear football. That’s burgers and being a serious coffee addict, normal burgers just don’t do it for me. Check out this delicious recipe that I first tried for last year’s 4th Of July.
