
There’s one thing that I love almost as much as coffee – it’s chocolate. I love the Italian Choco-Coffee Wedding Cookies that Jen from Stiletto Sports bakes, and when I came across this recipe from I Need Coffee I knew that I had to try it.
However, I did make a few changes to customize it along the way. Here’s what I came up with after a few different experiments.
Ingredients
- One box of chocolate cake mix
- Two Eggs
- Half a cup of butter
- Half a cup of espresso or dark roasted coffee (room temperature)
- One cup chocolate chips
Instructions
- Preheat oven to 350 Fahrenheit.
- Except the chocolate chips, mix all of the ingredients on low until well mixed. From personal experience, I do not recommend doing it by hand.
- Add chocolate chips and mix them in.
- Spray cookie sheets with cooking spray. Scoop the mix on to cooking sheets and bake at 350 Fahrenheit for 12-15 minutes.
- Cookies should easily come off the cookie sheet if cooked fully.
- Enjoy!
The cookies taste a little like a cake, with the chocolate flavoring of a delicious brownie and just a tiny hint of the coffee flavor. It’s like a delicious mocha from my favorite coffee shop with extra chocolate. Overall, a perfect ten. It even gets bonus points for being super easy to make.
Highly recommend pairing these cookies with a glass of milk or vanilla ice cream.
