Chocolate Mocha Cookies Recipe

There’s one thing that I love almost as much as coffee – it’s chocolate. I love the Italian Choco-Coffee Wedding Cookies that Jen from Stiletto Sports bakes, and when I came across this recipe from I Need Coffee I knew that I had to try it.

However, I did make a few changes to customize it along the way. Here’s what I came up with after a few different experiments.

Ingredients

  • One box of chocolate cake mix
  • Two Eggs
  • Half a cup of butter
  • Half a cup of espresso or dark roasted coffee (room temperature)
  • One cup chocolate chips

Instructions

  • Preheat oven to 350 Fahrenheit.
  • Except the chocolate chips, mix all of the ingredients on low until well mixed. From personal experience, I do not recommend doing it by hand.
  • Add chocolate chips and mix them in.
  • Spray cookie sheets with cooking spray. Scoop the mix on to cooking sheets and bake at 350 Fahrenheit for 12-15 minutes.
  • Cookies should easily come off the cookie sheet if cooked fully.
  • Enjoy!

The cookies taste a little like a cake, with the chocolate flavoring of a delicious brownie and just a tiny hint of the coffee flavor. It’s like a delicious mocha from my favorite coffee shop with extra chocolate. Overall, a perfect ten. It even gets bonus points for being super easy to make.

Highly recommend pairing these cookies with a glass of milk or vanilla ice cream.

Hmm…..those cookies look suspiciously like my Italian Chocolate Wedding Cookies…. just saying….. :)

Delicious looking cookies, can’t wait to try them. If I had all the ingredients, I would be baking right now. Think I’ll have mine with chocolate ice cream and of course a cup of coffee, lol lol.

Hmm these look really good and easy to make. Not sure about pairing the cookies with milk though – think I’ll have to make that ice coffee.
