I try to write my reviews, pretty quickly after taste testing the coffee. That way the ideas are still fresh in my mind and I can still (not literally) taste the coffee in my mouth. However, sometimes I get distracted by other coffees or I don’t put it on my review calendar. It’s nothing against the coffee, it just happens. Honduras Capucas from Irving Farm Coffee is one of those coffees.
You may remember that last month, I reviewed two other coffees from Irving Farm Coffee (El Salvador Everest and Ethiopian Yirgacheffee). They were both excellent coffees and I was hoping for more of the same from the Honduras Capucas.
This coffee comes from a co-op in the town of Capucas, where a little over 80 families work together to the coffee produce coffee. According to the Irving Farm Coffee website, throughout town coffee plantations border small homes, with vegetable gardens and chickens loose in the yard. Many of the farmers also have small “micro-mills” to process their coffee, and then sell through the coop. This lot of coffee is blended from various small family farms throughout the community.
This coffee is Fair Trade, Organic and Rain Forest Alliance certified. It makes me want to like this coffee even more.
The first thing that I noticed about this coffee was the floral aroma. It wasn’t overwhelming like some coffees and blended well with hints of honey and what reminded me of graham crackers. Yes, graham crackers like the kind that I’m now craving.
It had a nutty taste with fruit around the edges. I picked up on a drop or two of honey too.
A 12 ounce bag of Honduras Capucas is $14.75 at the Irving Farm Coffee website.
Honduras Capucas was good, but compared to the other two from Irving Farm Coffee, it was kind of plain. Still it wasn’t worth being put on the back burner for a month.
It earned an above average rating of 3.5 on the Daily Shot Of Coffee scale.

i’d love that one; if only because of the fine print.
I think it’s a flavor that I first picked up in craft beers, but now I’m seeing it in a lot of coffees.
