		<description>Whoa... CRAZY!!!

That recipe &#039;The Best Chili You Will Ever Taste&#039; was downloaded by my wife from recipezaar.com a few years back, and has gone on to become my signature dish that i make for all our very special friends.  It truly is the most amazing dish on the planet! I can not get enough of it.

Like Mike said, &quot;It includes three of my favorite things – coffee, beer and chili! That’s really all I need.&quot; - Let me add a fourth - MEAT!!!

Over the years, I&#039;ve tweaked the recipe a bit, as you do (and I&#039;m taking these changes to my grave, thank you very much!)

Oh, OK... I&#039;ll give you a few tips -

1/ Caramelize the onions.  This should take at least half an hour to do properly. It adds a little more sweetness to things.

2/ Use Guinness or similar stout. I use one BIG can or two smaller bottles.

3/ Here&#039;s the important part - Cook with first half of kidney beans, then let sit overnight in fridge.  Next day, bring back to simmer, then add second half of beans, and again put back in fridge overnight.  EAT ON 3RD DAY - or later... If you can wait!  Leaving it a few days lets all the complex flavors really come together.

4/ I serve in individual ramekins topped with mashed Agria potatoes, add a little grated tasty cheese and a sprinkle of smoked paprika, then pop under grill!

JUST AMAZING!!!! Best winter comfort food of all time.

Oh, nearly forgot this was a &#039;coffee blog&#039; - If you can, use two shots of good espresso for the coffee part of recipe.  It doesn&#039;t really add much of a strong coffee flavor, more just rounds things out...

I thought that was the only time I would ever see or hear of that particular combination again, but here it is.
