The temperatures hear are hovering above eighty already and just walking to my car I break a sweat. Hopefully the weather is cooler where you are, but either way it’s about time for some iced coffee recipes.

My favorite iced coffee recipe is little more than cold coffee and coffee ice cubes, but Splenda was kind enough to send me some of their sweetner and shared some of their mouth watering warm weather drinks. I can’t decide which one to try first.

Malted Mocha Frappe

Serves: 5
Prep Time: 5 Minutes
Total Time: 5 Minutes

INGREDIENTS

  • 1 packet SPLENDA® Flavors for Coffee, Mocha
  • 1/3 cup chocolate malt powder
  • 1 tablespoon instant coffee granules
  • 1 cup skim milk
  • 1 cup light, slow churned, vanilla ice cream
  • ½ cup crushed ice

DIRECTIONS

  1. Place ingredients in blender and puree.

Iced Latte

Serves: 5
Prep Time:10 Minutes
Total Time: 4 Hours 10 Minutes

INGREDIENTS

  • 1 cup boiling water
  • 4 teaspoons instant espresso granules
  • 1/3 cup SPLENDA
  • 2 cups fat free half-and-half
  • 2 cups 2% reduced-fat milk

DIRECTIONS

  1. Pour boiling water over instant espresso granules stirring until granules dissolve. Add Splenda and remaining ingredients, stirring well.
  2. Chill 4 hours or overnight. Serve over ice.

Iced Mocha Latte

Serves: 4
Prep Time:10 Minutes
Total Time: 8 Hours 10 Minutes

INGREDIENTS

  • 2/3 cup SPLENDA
  • 2 tablespoons Dutch process cocoa
  • 2 tablespoons instant coffee granules
  • 2 cups boiling water
  • 2 cups fat free half-and-half, divided
  • Optional Garnish: frozen whipped topping, chocolate curls

DIRECTIONS

  1. Combine Splenda, cocoa, and coffee in a small bowl. Gradually whisk in boiling water, whisking until blended. Stir in 1 cup half and half. Pour mixture into ice cube trays. Freeze 8 hours.
  2. Pour remaining 1 cup half and half in blender. Gradually add frozen mocha cubes, blending until smooth. Serve immediately. Garnish with chocolate curls and whipped, if desired.

Two questions for today: What’s your favorite sweetner for coffee and do you have a favorite drink to stay cool on hot summer days?

haha! When they asked me to check out their recipes, I didn’t even have to think twice. Last year, I don’t think I would’ve tried it.
