Low(er) Fat Coffee Brownies

Coffee Brownies

I’ve been working on Coffee Brownies in the Daily Shot Of Coffee test kitchen for way too long, but it was worth the wait for a treat that mixes my favorite dessert with my favorite beverage. As an added bonus, they’re extra easy to make and lower in fat than many traditional recipes.

Please note, I claim nowhere to be a cook and most of my friends and family would be willing to testify to this. I’m just a coffee addict who likes to add coffee to everything. This is a really simple recipe that anyone can make – even me. It’s basically, the standard brownie recipe that’s found on the box, but with some tweaks.

What You’ll Need:

Box of a pound of brownie mix. I used Betty Crocker Fudge Brownies. You can make your own brownies from scratch, but I’m a coffee blogger (AKA someone not so hot at baking) and I’m trying to keep the recipe as easy as possible.

Instead of water, I used a quarter cup of coffee. Specifically, I used a mix of half ground Starbucks espresso and half Kona blend.

Instead of vegetable oil, I used 2/3 a cup of unsweetened apple sauce. When the applesauce alternative was suggested, I thought the idea was crazy, but it works. In the final product, I couldn’t taste the applesauce at all.

Two eggs.

How To Make It:

Heat the oven. It varies depending on which mix you use and the size of the pan, but I found for an 8”x8” pan at 325 degrees Fahrenheit worked best.

Use cooking spray to grease the bottom and sides of the pan. I learned the hard way that you definitely don’t want to skip this step.

Stir the brownie mix, coffee, applesauce and eggs until they’re well blended. Make sure that coffee has time to cool down or it could cook the eggs.

Baking time varies, but the longer 52 minutes worked for me. It was a really long time to wait for brownies, but it was worth every minute of the wait.

The Results:

The brownies are chewy and delicious. I wouldn’t complain if more of the coffee flavor came through, there was only a minimal hint of coffee in the final product, but it’s still better than the straight out of the box brownies.

I know. You’re a guy. Not big on the baking hahaha. Box mixes hurt my domestic goddess soul.

I don’t think I kept the envelope from the samples you sent me, so if you send your addy, next time I make a giant batch, I’ll send you some of mine :) You’ll completely forget the box mix brownies. And I have a bag of beans for you to try!

I haven’t been mad at you in a while but this is big, you do know that Brownies are one of my all time favorite foods right?

You had some pretty good brownies on Sunday, but they were missing one thing – coffee.

And yeah you can blame me for a coffee addiction. It wouldn’t be the first time that I’ve caused someone else’s addiction. I may need to start a support group.

I’ve been making lower fat mocha brownies for years! Ever since I was a kid and some lady in the church gave us mocha fudge, I’ve been a fan of coffee and chocolate combined. I’m happy to see that you’re exposing more people to this deliciousness.
