The coffee does look very light, but I have tried a little darker and it just does not do the coffee justice. I feel like It’s a very sensitive coffee, and not just because it’s from Hawaii.

i guess you KNOW this Mike, but i’ve found that most mildly roasted coffee has a more complex fruity honey other light flavor taste than the deep City roast. maybe Jamies light roasting put a charred patina on the seed coats and still allowed the more elusive flavors to come through when it was brewed.

yeahhhh quality. who’d have thought we worried over this minor aspect.

anyway, Mike, you got to expand the ‘…wine like flavor …’ aspect.
just what type of wine are you talking about here?

I agree, and I think it’s a lesson that some major coffee companies could use. Stop focusing so much on the presentation, focus on the quality of the coffee.

Any coffee with a simple presentation, and the description including the roast date would peak my interest. No fancy marketing, no PR campaign, just a bean to be judged. Nice!
